Chocolate Production

Today's Projects:
White Chocolate Cranberry Bark
Chocolate Covered Strawberries
Dark Chocolate Walnut Clusters
Dark Chocolate Cashew Clusters
"Cranberry Crunch Clusters" (cranberries, cashews, and kashi, in dark chocolate)

Learned that a microplane grater works really well for making "snow" out of white chocolate, and cleans up nicely too; also learned that a ludicrously large silicone spatula (about the size of my whole hand) works even better for mixing up and coating clusters than normal sized ones.

Also learned that having a plate of them sitting around, and an available stream of coffee, leads to eating way more of them than I should (more than not having the coffee would do.) bzzzzzzz :-)
